Green Farm Coix Seed: The Asian Pantry Grain Behind Silky Sweet Soups and Grain Drinks
In Taiwan, Korea, and much of East and Southeast Asia, one grain shows up in soups, sweet soups, and warm drinks year-round: coix seed, better known in English as Job’s tears. Green Farm Coix Seed is made from large, white grains selected for their size, color, and aroma.
What Is Coix Seed?
Coix seed comes from Coix lacryma-jobi, a tall grass grown across tropical Asia. Its English name, Job’s tears, comes from the teardrop shape of the seed. In Chinese it’s 薏仁 (yì rén); in Korean it’s 율무 (yulmu).
Coix seed is often confused with pearl barley, and some markets even sell barley as “Job’s tears,” but they are different plants. Coix seeds are larger and rounder, with a distinct groove running down one side. When cooked, they’re chewier and hold their shape better than barley. They also have a mild, slightly sweet, nutty aroma that makes them especially well suited to desserts and drinks.
Selected for Quality
Green Farm Coix Seed is grown in Thailand, one of the world’s main sources of coix seed. The grains are selected for:
- Size: large, plump grains that look good in a bowl and give a satisfying chew
- Whiteness: clean, bright white grains that cook into an appealing, pale sweet soup
- Aroma: a natural, gentle grain fragrance that comes through in drinks and desserts
The only ingredient is coix seed, with nothing added.
How to Cook Coix Seed
Coix seeds are harder than rice or barley, so they need a little more time:
- Rinse. Rinse the grains under cold water.
- Soak. Soak for at least 4 hours, or overnight. This shortens the cooking time considerably and gives a softer, more even texture.
- Simmer. Cook in plenty of water until tender, usually about 40 to 60 minutes on the stovetop after soaking. A pressure cooker or rice cooker on the porridge setting also works well.
- Check the texture. Cooked coix should be soft and plump with a light chew in the center.
Cooked coix keeps for a few days in the fridge, and it also freezes well in portions.
Classic Ways to Enjoy Coix Seed
1. Coix and red bean sweet soup. Simmered with red beans and rock sugar, this is a classic Taiwanese sweet soup, served warm in winter.
2. Coix and mung bean soup. Served chilled, this light, refreshing sweet soup is a summer favorite throughout Taiwan and Southern China.
3. Coix drink. Blend cooked coix with its cooking water and a little sugar, then strain for a smooth, creamy grain drink. It’s popular in Taiwanese breakfast shops and tea stalls.
4. Taiwanese four-herb soup. Coix seed is a key ingredient in this classic savory soup (四神湯), usually cooked with pork and traditional herbs.
5. Roasted coix tea. Dry-roast the grains until golden and fragrant, then steep or grind them for a nutty grain tea similar to Korean yulmu-cha.
6. Congee and grain rice. Add coix to rice porridge, or cook it with rice for extra texture.
